Is it possible to do an Offline backup without using the 'SYSDBA' privilege ?
Basically, we have a OS authenticated user, who performs the backup. Now, in order to shutdown the database, I have to initiate a connect / as sysdba. If that is the case, I am at risk of exposing all the database objects for updates, deletes privileges to this userid. Is there no alternative available to take an off-line backup without giving sysdba access.

Consider providing SYSOPER instead of SYSDBA access to your backup team. With SYSOPER access, users can startup, shutdown, mount, and dismount instances.

Best regards.
